If you’ve never had hot pot before, think of it less like a traditional dinner and more like an interactive food experience. It’s not about one finished dish being brought to the table, it’s about cooking everything yourself, right there, in a simmering pot of broth, exactly how you like it.

It might sound intimidating at first, but it’s actually one of the easiest (and most fun) ways to try something new at home.
For me, it’s also familiar. I grew up eating hot pot with my dad, nothing fancy, just a pot going, ingredients laid out, and that same rhythm of cooking as you eat. It was simple, but it stuck. There’s something about it that feels less like a “meal” and more like time spent together.
Now, we usually start at 99 Ranch Market, grabbing everything we need for the night...thinly shaved beef or lamb, shrimp, fish balls, napa cabbage, enoki and oyster mushrooms, spinach, bamboo shoots. Basically, we gather a mix of proteins and veggies that cook quickly in hot broth. You don’t need to overthink it. If it cooks fast and sounds good, it works.
Once everything’s laid out, you just keep a pot of broth simmering at the table and start cooking. Drop in a slice of beef, let it cook for a few seconds, pull it out. Toss in some mushrooms or cabbage, let them soak up the flavor. It’s casual, it’s hands-on, and everyone eats at their own pace.

The real game-changer is the sauce.
We mix up our own with chili oil, raw egg, garlic, jalapeños, gluten-free soy sauce, and Korean BBQ paste. There’s no exact formula, you just eyeball it and build it until it tastes right. Every bite gets dipped, and every bite hits a little differently depending on what you’re eating.
You can pair it with rice noodles or keep it simple with white rice on the side to balance everything out.

Hot pot isn’t about getting it perfect. It’s about trying something new, figuring out what you like, and enjoying the process. Once you try it, it’s the kind of thing you’ll want to do again. We have hot pot a few nights a month now...and it never gets old.
