Let’s Ring in the Birth of the New Year with Birthday Cake Scones

I don’t know about you, but pretty much anything with sprinkles will result in a really good time in my book, so when I stumbled upon a local bakery that had Birthday Cake Scones I knew I wanted to find a way to make them at home! My kids also always seem to eat better when sprinkles are involved! So grab your favorite sprinkles and let’s ring in the birth of the New Year!

Ingredients:

  • 3 cups all-purpose flour
  • ¼ cup date sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup cold unsalted butter, cubed
  • 1 cup whole milk
  • 1 TBS vanilla paste
  • 1 tsp almond extract
  • ½ cup rainbow sprinkles
  • ½ cup white chocolate chip

Directions:

  • Preheat oven to 375°F
  • Mix together flour, date sugar, baking powder, and salt. Using a pastry blender or your hand combine butter until mixture is crumbly.
  • Combine wet ingredients; add 1 cup milk, almond extracts, and vanilla bean paste.
  • Add wet ingredients to flour mixture until dough is combined.
  • Add sprinkles and white chocolate chips.
  • Place the dough onto a heavily floured surface, and knead for about 1 minute.
  • Press dough into a 9-inch circle, about 1 inch thick. Cut into wedges and place on baking sheet.
  • Bake about 30 minutes. Let cool. Apply icing if desired.
  • Celebrate!

Notes:

  • This is such a fun recipe that you can customize! Mine are a little darker because of the date sugar, but you can sub regular sugar as well. You can customize with any sprinkles you’d like, we opted for the dye free. You can also make a simple icing for these. I used some left over cookie icing I had on hand. Honestly they were really great without icing. I used sugar free white chocolate chips and they did get a little ugly when baking so be forewarned if you add them!
