  • 80g butter, chopped
  • 1/4 cup caster sugar
  • 1/2 cup treacle

  • 2 cups brown rice flour (see Notes)
  • 1/2 cup gluten-free cornflour
  • 2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1 tsp xanthan gum (see Notes)
  • 1/2 tsp bicarbonate of soda
  • Extra brown rice flour for dusting
  • Royal icing
  • 2 egg whites
  • 3 cups pure icing sugar, sifted
  • 1 tsp lemon juice

Cranberry Orange Shortbread

One of my all-time favorites and a classic, peanut butter blossom cookie, these heavenly treats can also use almond butter instead! Topped with a Hershey’s Kiss or your favorite chocolate candy, they’ll be an instant hit.

Ingredients:

  • 2 cups Bob’s Red Mill Super-Fine Almond Flour
  • ½ tsp sea salt
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp cinnamon
  • ¼ cup peanut butter or almond butter
  • Two tbs coconut oil
  • ¼ cup coconut sugar or brown sugar
  • 2 tbsp pure maple syrup or honey
  • 2 tbsp almond milk or any milk
  • 1 tsp pure vanilla extract
  • ¼ cup granulated sugar for rolling cookies in
  • 20-22 chocolate kisses unwrapped

  • ½ teaspoon xanthan gum – check to see if your four already has this in it; if so, leave it out
  • ¾ cup finely chopped nuts of your choice
  • ¼ teaspoon salt
  • powdered sugar for rolling
