Cottage Cheese Brownies

This year, I’m making a big effort to include more protein in my diet for lots of reasons. I’ve noticed that I feel better, and am fuller longer, when I prioritize protein. My favorite way to add protein to my diet is with cottage cheese. I have found ways to add cottage cheese to pancakes, waffles, ice cream, and now even brownies. I knew that this recipe would be delicious, and I can assure you these are some of my favorite brownies!
Ingredients:
- 1 Cup Cottage Cheese
- 1 tsp Vanilla Extract
- 1 egg
- 1/2 cup melted Sugar Free Chocolate Chips
- 3/4 cup milk
- 1/4 cup melted salted butter
- 1/2 cup coconut sugar
- 1/2 cup cocoa powder
- 3/4 cup flour
- 1/2 tsp of baking soda
- 1/4 tsp salt
- 1/3 cup Sugar Free Chocolate chips for topping
Directions:
- Preheat oven to 350 degrees.
- Melt 1/2 cup of Sugar Free Chocolate chips in microwave.
- Combine egg, milk, melted chocolate chips, melted butter, cottage cheese, vanilla extract, and cocoa powder in blender. Mix until well combined.
- In a separate bowl, combine flour, baking soda, and salt.
- Once blended, mix wet and dry ingredients. Stir until well combined.
- Add batter to greased 9×9 baking dish and top with remaining 1/3 cup Sugar Free Chocolate Chips.
- Bake for 20 minutes.
- Allow the brownies to cool, then, serve & enjoy!
I hope you enjoy these brownies as much as my family did! They likely won’t last long around your home. These are totally customizable and there are plenty of ways to make them your own!
