In the winter time I do not mind making heavy meals like pastas, soups, chilis, etc. However, when it comes to late Spring and all of Summer, I absolutely cannot stand making meals that are time consuming. After researching and testing out different meals I found these five meals were my top favorites to make. All of the meals listed below took less than thirty minutes each to make. Spinach Feta Greek Burgers

INGREDIENTS:

Burger Patties:

  • 1 pound ground beef 
  • 5 ounces fresh baby spinach leaves, chopped
  • 2 ounces feta cheese
  • 1/3 cup chopped sun-dried tomatoes 
  • 1 egg
  • 1/2 teaspoon salt

Buns & Toppings:

  • sandwich buns
  • fresh baby spinach leaves
  • sliced tomato
  • sliced shallot
  • tzatziki sauce 

Grilled Salmon Burgers with Avocado Salsa

INGREDIENTS:

Salmon Patties

  • 1 pound salmon fillet
  • 1/2 cup panko crumbs
  • egg
  • green onions chopped
  • 1/2 poblano pepper seeded and chopped
  • 1 tablespoon fresh lemon or lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For Avocado Salsa

  • 1 large ripe avocado
  • 1/2 poblano pepper seeded and chopped
  • green onions chopped
  • 1 tablespoon fresh lemon or lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Hot Ham & Swiss Croissants

INGREDIENTS:

  • 2 tablespoons dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 4 croissants
  • 8 slices swiss cheese
  • 1 pound deli ham

Avocado Tuna Melt

INGREDIENTS: 

  • 4 slices whole grain bread
  • 15 ounces white chunk albacore tuna 
  • 3 1/2 tablespoons mayonnaise 
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon onion flakes
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • avocado 
  • 1 large tomato 
  • 4 sliced muenster cheese

Shrimp Fajita Bowls

INGREDIENTS:

  • 1 ¼ pound raw shrimp
  • 3 small bell peppers
  • 1 small yellow onion
  • 2 tablespoon avocado oil
  • ½ teaspoon chili powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 16 ounces riced cauliflower
  • ¼ cup Habanero Ranch Dressing
  • fresh cilantro, guacamole and lime wedges for serving
