Valentine’s Day is a time to express affection with greetings and gifts. For many couples, this day is celebrated with a special meal. I’ve found some great recipes that will be appreciated by everyone in the family including the kids. These recipes are fun and so easy to make!

Mini Heart Pizza’s

Prep Time: 3 Hours
Cook Time: 15 Mins
Total Time: 3 Hours 15 Mins

Ingredients

  • 1 loaf Rhodes White Bread, frozen
  • 1 jar pizza sauce
  • 2 cups mozzarella cheese, grated
  • 1 small package of mini pepperonis

Instructions

  • Place one loaf of frozen Rhodes White Bread on a plate and allow to thaw for three hours. Roll out on the counter with a rolling pin and flatten till about a quarter inch thick.
  • Use a heart cookie cutter to cut out individual pizzas. Place on a greased cookie sheet and continue to roll out dough and cut out pizzas till gone. You can also wrap up the leftover dough and place it in the fridge for another night.
  • Add about 1 Tbsp pizza sauce to each pizza. Then add the desired amount of cheese and pizza toppings. Bake pizzas at 350° F for 13-15 minutes. Serve and enjoy!

Mini Strawberry Shortcakes

Cook Time: 30 Mins
Total Time: 1 Hour

Ingredients

  •  1 small loaf of pound cake
  •  16 oz. strawberries (sliced)
  •  2 Tablespoons sugar
  •  ¼ cup water
  •  1 pint heavy whipping cream
  •  2 Tablespoons powdered sugar
  •  1 tsp. vanilla

Instructions

  • Purchase or make a small loaf of pound cake and cut it into cubes. Set aside. 
  • Slice strawberries into small bites. Combine with sugar and water in a large bowl and set aside to make syrup.
  • In a mixer, beat whipping cream until peaks form.  Add powdered sugar and vanilla.  Stir well.
  • In small glass containers, begin layering shortcakes by adding a few cubes of pound cake to each glass, followed by strawberries with syrup, then whipped cream.  
  • Repeat the trifle layering steps, and finish with a sliced strawberry on top.

No dinner reservations…no problem; enjoy your Valentine’s Day without spending hours in the kitchen.
