I don’t know about you, but my family and I love pancakes. I am always looking for ways to make my favorite recipes more protein-packed and I found just that, when I started to add Cottage Cheese to my favorite pancake recipe! Cottage cheese is really having its moment, and I have to tell you…I am here for it! There are so many fun ways to add this into your recipes, but I think this one may be my favorite!

Ingredients:

Directions:

  • Combine all dry ingredients to a bowl and mix. Set aside.
  • Combine milk, Cottage Cheese, oil of your choice, eggs, and Vanilla Extract. Blend. You do not have to do this step but I like the consistency better when I blend the Cottage Cheese. I think this makes for a fluffier pancake.
  • Once blended combine wet and dry ingredients and mix well. There will be lumps.
  • Heat over medium heat in a skillet.
  • Add batter to your favorite pancake dispenser. (Another optional step but this makes pancake dispensing a breeze!)
  • Cook pancakes over medium heat. When the pancakes starts to bubble it’s the perfect time to flip!
  • Cook the pancake to a golden brown.
  • Top with your favorite items like chocolate chips, powdered sugar, and/or syrup!
  • Serve & Enjoy!

I have a lot of fun with this recipe because there is always a way to make something different. I have done Blueberry and Lemon pancakes by adding just a splash of Lemon Extract to my batter, and then, I add frozen blueberries while cooking.

I have also done birthday cake by using Cake Batter Extract and sprinkles. We also enjoy fresh peaches and a dash of cinnamon. The options are endless. My kids also love chocolate chips in their pancakes. Plus, you can get creative with your pancakes and make critters or other fun things! This recipe is perfect on its own or with a few additions. You really can’t go wrong!
