Fruity Pebble Cookies

I don’t know about you but I love cereal and I also love cookies! So when I found an opportunity to combine the two I thought what a perfect combo! You really can’t go wrong with Fruity Pebbles, chocolate, and marshmallows! This recipe is delicious and makes just the perfect amount of ooey gooey cookies!

Supplies:

Ingredients:

  • 1 3/4 cup All Purpose Flour
  • 1 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 10-12 Large Marshmallows
  • 1/2 cup of White Chocolate Chips
  • 10 Tbs. of butter
  • 1/2 cup of Coconut Sugar
  • 1 1/2 cups of Fruity Pebbles (divided)
  • 1 Egg
  • 1 tsp. Vanilla Extract

Directions:

  1. Pre-heat oven to 350 degrees.
  2. With your mixer, cream together butter, coconut sugar, and 1/2 cup of Fruity Pebbles.
  3. Add in egg and vanilla extract.
  4. Stir in dry ingredients – flour, baking soda, and salt.
  5. Add in remaining cereal.
  6. Add in chocolate chips.
  7. Scoop a 3-4 tablespoon ball of dough and flatten. Wrap dough all the way around the marshmallow.
  8. Repeat for remaining dough.
  9. Depending on the size of your Cookie Sheet you can bake 4-6 cookies at a time.
  10. Bake for 11-14 minutes.
  11. Allow to cool on Cookie Sheet.
  12. Carefully transfer to Cooling Rack.
  13. Serve & Enjoy!

These cookies have just the perfect blend of slight crunch with the cereal and gooey with the marshmallow. My husband doesn’t “love” any of these ingredients, but even he had a hard time passing up this delicious concoction! I hope you enjoy these cookies as much as my family!
