Fruity Pebble Cookies
I don’t know about you but I love cereal and I also love cookies! So when I found an opportunity to combine the two I thought what a perfect combo! You really can’t go wrong with Fruity Pebbles, chocolate, and marshmallows! This recipe is delicious and makes just the perfect amount of ooey gooey cookies!
Supplies:
Ingredients:
- 1 3/4 cup All Purpose Flour
- 1 tsp. Baking Soda
- 1/4 tsp. Salt
- 10-12 Large Marshmallows
- 1/2 cup of White Chocolate Chips
- 10 Tbs. of butter
- 1/2 cup of Coconut Sugar
- 1 1/2 cups of Fruity Pebbles (divided)
- 1 Egg
- 1 tsp. Vanilla Extract
Directions:
- Pre-heat oven to 350 degrees.
- With your mixer, cream together butter, coconut sugar, and 1/2 cup of Fruity Pebbles.
- Add in egg and vanilla extract.
- Stir in dry ingredients – flour, baking soda, and salt.
- Add in remaining cereal.
- Add in chocolate chips.
- Scoop a 3-4 tablespoon ball of dough and flatten. Wrap dough all the way around the marshmallow.
- Repeat for remaining dough.
- Depending on the size of your Cookie Sheet you can bake 4-6 cookies at a time.
- Bake for 11-14 minutes.
- Allow to cool on Cookie Sheet.
- Carefully transfer to Cooling Rack.
- Serve & Enjoy!
These cookies have just the perfect blend of slight crunch with the cereal and gooey with the marshmallow. My husband doesn’t “love” any of these ingredients, but even he had a hard time passing up this delicious concoction! I hope you enjoy these cookies as much as my family!
