Transform those Holiday Leftovers into Your New Favorite Comfort Food

As much as I look forward to indulging in those traditional holiday foods, such as ham and turkey, I will admit, I can only eat so much of it before my taste buds are ready for a change. If you spend hours in the kitchen cooking, then you probably want to make sure all the food gets eaten instead of being thrown out. You can repurpose those leftovers and make your family some new and exciting comfort foods that they will surely enjoy. We have a recipe to help transform your leftover ham and what’s even better is that it will cover breakfast the next day. So, grab that ham out of the fridge and let’s get cooking!

Repurpose your leftover ham by dicing it in cubes. We are going to make some holiday ham & cheese egg bites that are filling and versatile. The great thing about this recipe is that you can customize it to fit your tastebuds.

Ingredients:

  • 6 eggs
  • 3 tablespoons milk
  • 3/4 cup grated or shredded cheddar cheese
  • 1 cup ham, cut into small cubes
  • Salt and pepper to taste

Directions:

  • Preheat the oven to 350º F.
  • Spray mini muffin pan generously with cooking spray.
  • In a separate bowl, whisk together the eggs and milk.
  • Add the grated cheese.
  • Stir the ham into the egg mixture.
  • Pour into the greased mini muffin pan.
  • Bake at 350º F for about 14-16 minutes. Tops should be golden brown.
  • Cool slightly, then remove from the pan and serve.

Notes:

  • Optional Ingredients: red bell pepper or green onions. If peppers or onions are used be sure to sauté before adding to your egg mixture.
