Even though we're more than halfway through the year, I'm still working on those resolutions I had planned for 2026. One thing I promised to focus on this year was getting in more protein! This meal does just that and also lets me feel a little nostalgic. I don't know about you, but as a kid, I thought it was a real treat to have some Hamburger Helper and this recipe is a little bit of a homage to childhood me! The other bonus to this recipe is that it's only one pot so cue easy dinner cleanup. So, grab your favorite pan and let's add some protein into your day! I tracked about 37 grams of protein in just one serving size.

Ingredients:

  • 1 lb of Ground Chicken
  • 1 onion chopped
  • 1 packet Mild Taco Seasoning
  • 1 1/2 cups of Chicken Bone Broth
  • 2 1/2 cups of your favorite protein elbow macaroni
  • 10 oz of Rotel
  • 8 oz of tomato sauce
  • 1 tbsp minced garlic
  • 2 cups of reduced fat Mexican style shredded cheese
  • 1 can of Mexican style corn
  • 1 container nonfat plain Greek Yogurt

Directions:

  1. Pre-heat Dutch Oven or large skillet over medium heat.
  2. Combine ground chicken, taco seasoning, and onion.
  3. Once the chicken is cooked thoroughly drain any excess grease.
  4. Add bone broth, tomato sauce, Rotel, protein pasta, corn, and minced garlic.
  5. Stir and bring to a boil.
  6. Once boiling, turn the heat down to a medium-low.
  7. Cover with a lid and cook pasta until done.
  8. Add shredded cheese and greek yogurt.
  9. Stir and let sit until all the cheese is melted.
  10. Enjoy!

Notes:

  • I've made this recipe a few times and I used rigatoni once, so feel free to adjust to your favorite protein pasta! It doesn't have to be elbow macaroni.
  • You can sub the bone broth for chicken broth. I opted for the bone broth for the additional protein.
  • The amount of protein will vary with your ingredients, but I tracked this recipe for 6 servings in my favorite calorie tracker.

This recipe is a favorite among my family. It's fun to swap out ingredients and I've had a lot of fun making this recipe mine. We love to serve this with a light salad. I hope your family enjoys this recipe as much as my family did.
